Eggplant roll-ups with La Madia Organic Black Truffle Tartufata

Ingredients for 4 servings :

2 eggplants, 300gr of tofu, La Madia Black Truffle Organic Tartufata, Salt, Pepper, Extra virgin olive oil, Fresh basil leaves

Directions:

Cut to lenght the eggplants into thin slices.Grill the eggplant slices on a plate grill.

Dice the tofu (cubes about 5 cm.)

Lightly salt the eggplants. Spread a thin layer of La Madia Black Truffle Organic Tartufata on each slice, add the tofu and roll the eggplant slice onto it.

Serve the rolls with pepper and fresh basil leaves.
