Omelette Sandwich with cherry tomatoes and La Madia Pecorino Cheese & Black Truffle “Spread & Sauce”

Ingredients for 6 servings :

3eggs, 1 zucchini, 1 jar of La Madia Pecorino Cheese & Black Truffle “Spread & Sauce”, 40gr of cherry tomatoes in oil, salt, pepper, extra virgin olive oil.

Directions:

Break the eggs in a bowl. Add salt and pepper and whisk it all with a fork.Heat some oil in a nonstick pan (diameter: 20cm). Pour the egss into the pan and cook it as a omelette. Flip it in order to cook the other side too. Take the omelette on a cutting board and make 12 small squares.

Cut lengthwise the zucchini with a potato peeler.

Spread La Madia Pecorino Cheese & Black Truffle “Spread & Sauce” on 6 of the omelette small squares, superimpose on it the other 6. Put on top a slice of zucchini and one or two cherry tomatoes. Secure the sandwiches with a toothpick and serve.
